Funky, wild ale notes with apricot jam flavors and subtle wine-like, oak aftertaste. This 2 year long project involved a Saison base for this beer a long fermentation with brettanomyces and pedicoccus and aged for 6 months in white wine barrels with fruit purees added. The result is a real special beer recommended for special occasions, to share or to enjoy on your own.
